Partnering with her friends at Foxy Produce, Tori shares how to make healthy, delicious, and on-the-go mason jar salads. Tori likes using quart-sized jars for entree salads and pint-sized jars for side salads or fruit salads. Wide mouth jars are easier to stuff and easier to pour. Wet ingredients go on the bottom (like dressing), then the heaviest and non-absorbent ingredients go in next (like firm vegetables, beans, lentils, or chickpeas). Then, continue to layer with softer, or the more absorbent ingredients next (like soft fruits, soft vegetables, cheeses, nuts, or seeds). Finish by adding the greens last.

Make the classic YES! Nutrition salad by layering the following ingredients from bottom to top in your glass jar:
– 2 tablespoons of your favorite dressing
– 1/2 cup of chickpeas
– 1/4 cup of cauliflower florets
– 1/2 cup of sliced strawberries
– 1 tablespoon of feta cheese
– 1 tablespoon of hemp seeds
– Fill to the top with your favorite leafy green vegetable, like spinach!

Add the lid and store the salad in a jar upright in your refrigerator for up to 4 days. You can meal prep many salads at one time to enjoy throughout the week! When ready to enjoy, unscrew the lid and shake the salad into a bowl. Then, enjoy!
