Healthy Chicken Soup Recipe

Ingredients

  • 250 gms. Chicken (bone-in chicken)
  • 1 cup mixed vegetables of your choice (carrot, potatoes, peas, french beans etc.)
  • 1 tbsp. Ginger shredded/grated/paste
  • 1 tsp. Oil
  • Spices
  • 1 bay leaf
  • Peppercorns
  • 2 Small Cinnamon sticks
  • 3-4 cloves
  • Fresh herbs (for garnish)

Instructions

1. Add vegetables, chicken, salt, cinnamon stick and few peppercorns in a pressure cooker. Pour enough water (3 to 4 glasses) and cook for 3 whistles.
2. Heat a deep pan with oil and sauté the rest of the spices along with ginger.
3. Add carrots, beans and fry for a minute and cook until the carrots are cooked.
4. Drain off the stock to the pan and set aside the chicken.
5. Shred the chicken and add it back to the pan

Chicken Mexican Tacos Recipe | Tacos With Chicken Filling

Ingredients

  • 1/2 cup onion chopped
  • 1 no. red pepper chopped
  • 1 no. green pepper chopped
  • 2 tbsp olive oil
  • 2 cloves garlic smashed.
  • 1 tsp paprika powder
  • 1 tbsp tsp cumin powder
  • 500 gms chicken mince

Salsa

  • 1 large tomato
  • 1 medium onion
  • 2 tbsp fresh parsely
  • 2-3 green chillies
  • 1 tsp tabassco
  • 1/2 lemon (juice)

Salt

  • Guacamole
  • 1 ripe avocados
  • ½ lime
  • Salt as required
  • 2 tbsp fresh cream

Instructions

  1. Chop the veggies
  2. In a pan heat some olive oil and then add the veggies and saute them
  3. Add minced chicken and cook it on a high flame
  4. Add salt, paprika and roasted cumin powder
  5. Roughly chop the garlic and add it into the pan and stir it properly
  6. Once the chicken is cooked properly turn off the flame and keep it aside to cool
  7. Chop onion,green chillies and tomato and mix them together
  8. Also chop some parsley, salt and juice of lemon mix it and add tabasco
  9. In a bowl add the avocado, salt, cream and juice of lemon
  10. Whisk it all together
  11. Shred the lettuce leaves
  12. In a taco shell put lettuce leaves, chicken filling, salsa and guacamole
  13. Chicken Mexican Taco is ready to be served.

 

Korean Grilled Beef Recipe

Ingredients:

  • ½ onion
  • 3 green onions/scallions
  • 4 inch carrot (4″ = 10 cm)
  • 1½ lb thinly sliced beef (chuck or rib eye) (can also use tenderloin, top sirloin) (See Notes)
  • 1 Tbsp sesame oil
  • ½ Tbsp white sesame seeds (roasted/toasted) (for topping)

Bulgogi Marinade:

  • 4 Tbsp Korean soy sauce
  • 2 Tbsp sesame oil
  • 3 Tbsp brown sugar (don’t substitute with honey as it burns easily)
  • 8 cloves garlic (8 cloves = 4 tsp)
  • ½ Asian pear (half pear = 4 Tbsp)
  • Freshly ground black pepper

INSTRUCTIONS

  1. Gather all the ingredients.

  2. To make the bulgogi marinade, add 4 Tbsp soy sauce, 2 Tbsp sesame oil, and 3 Tbsp brown sugar, and crush 8 cloves garlic (or minced garlic) in a large bowl.

  3. Grate ½ of an Asian pear.

  4. Add freshly ground black pepper and mix all together.

  5. Cut the onion into thin slices and cut the green onion into 2 inch (5 cm) pieces and then cut in half lengthwise.

  6. Using a peeler, peel some carrot (or slice thinly). Add the onion, green onions, carrot in the marinade and mix all together.

  7. Add the meat in the marinade, separating each slices. Mix all together to coat with the marinade. I wear plastic gloves so I can mix thoroughly with my hands.

  8. Set aside for at least 30 minutes or best if overnight.

  9. In a large skillet (I use a cast iron grill pan here), heat 1 Tbsp sesame oil over medium high heat.

  10. Cook the marinated meat in a single layer until cooked through, about 5 minutes. Transfer the meat to the plate and sprinkle with sesame seeds.

  11. If you have a single serving cast iron plate, you can use it to keep the meat warm for a longer time.

RECIPE NOTES

If you can’t find thinly sliced beef, you can freeze the block of meat for 2 hours (depending on the size and thickness) prior to slicing

 

Spaghetti Carbonara Recipe

INGREDIENTS

  • 500 grams Spaghetti
  • 250 grams bacon, cut into strips
  • 100 grams button mushroom
  • 2-3 cloves garlic
  • 1 onion
  • 2 eggs
  • cooking cream
  • parsley
  • salt & black pepper

 

Japanese Pudding ”Purin” Recipe

Ingredients:

Caramel Sauce

  • ⅔ cup (140 g) granulated sugar
  • 2 Tbsp. (30 ml) water
  • 2 Tbsp. (30 ml) boiling water

Custard

  • 10 g (.35 oz) gelatin powder* or gelatin sheet (= 1 Tbsp. gelatin powder or 4 gelatin sheets)
  • ¼ cup (60 ml) water
  • 4 large egg yolks (Here are some egg white recipes)
  • ⅓ cup + 1 Tbsp. (80 g) granulated sugar
  • 1 ¾ cups (400 ml) milk
  • ½ cup (120 ml) heavy whipping cream
  • 2 tsp. vanilla

Instructions

  1. Gather all the ingredients. You will also need 8 4-oz ramekins (4 oz = 1/2 cup = 120 ml).

Caramel Sauce

  1. Prepare boiling water (you will only need 2 Tbsp) and a cold damp towel (for Step 4).

  2. Combine sugar and water in a saucepan over medium heat. Gently shake the saucepan to evenly distribute sugar and do not touch until the mixture starts to turn golden brown. Gently swirl and tilt the pan again to distribute the mixture to have even color until it becomes amber color (like darker honey color), about 6 minutes.

  3. Immediately remove from heat to a cold damp towel and add 2 Tbsp boiling water. It will create a huge splash so please be careful. You can shield with a lid or wear oven mitts to protect your hands. Stir the saucepan to mix together. This will slightly thin out the caramel sauce and ensure that it doesn’t become too thick in the ramekins.

  4. Briefly dip the ramekins in hot water to warm up. This will prevent the caramel from solidifying (just shake off excess water and no need to dry).

  5. While caramel is still hot, evenly distribute the caramel among the 8 ramekins. Set aside and let the caramel thicken naturally (which is why the caramel will not mix with the custard mixture later).

Custard

  1. In a small bowl, cut 4 gelatin sheets into thin ½ inch (1.3 cm) strips. Add ¼ cup (60 ml) cold water and set aside for 5-6 minutes until the gelatin “blooms” (expands).

  2. If you’re using powder gelatin, combine 3 tsp (10 g) gelatin powder and ¼ cup (60 ml) water and let stand for 1 minute. Then microwave on high for 30-40 seconds and stir. It’s ready to use.

  3. Once gelatin sheets are bloomed, bring 1 inch (2.5 cm) of water to simmer and place the bowl of gelatin mixture over the saucepan (double boiler). Make sure to use a heat resistant bowl which is larger than the opening of the saucepan. Steam will immediately warm up the glass bowl and start dissolving the gelatin. Turn off the heat and set aside. If somehow you end up taking a longer time to do the following process and the gelatin has set into a solid, you will need to melt it back into a liquid with double boiler again.

  4. In a large mixing bowl, whisk together the egg yolks and sugar until pale and creamy.

  5. In a medium saucepan, heat 200 ml (roughly 1 cup) milk (keep the rest for later) over medium heat until the milk is warm to the touch.

  6. Slowly add the warm milk, whisking constantly (tempering the egg mixture).

  7. Pour the mixture back into the saucepan. Cook over medium low heat, stirring constantly (keep an eye on the pot ALL THE TIME; otherwise the mixture will burn on the bottom), until the mixture coats a spoon with a thin film or small bubbles start to form at edges of pan, or reaches 160F (71C).

  8. Add in the gelatin mixture and mix well. Remove from the heat.

  9. Strain the mixture through a fine sieve into a clean bowl.

  10. Add the rest of the milk (200 ml), heavy whipping cream, and vanilla and whisk all together. We’re adding them at the end to help the mixture cool down.

  11. Divide the custard into the 8 ramekins. Cover with plastic wrap and chill in the fridge overnight or up to 3 days. The caramel on the bottom will become thinner after the moisture from the custard transfers to the caramel.

  12. To serve, run a small sharp knife or toothpick around the edge of each ramekin to loosen the custard. Quickly invert each custard onto a plate. If it doesn’t release right away, gently shake the ramekin a few times to help it out.
