Papad Salad Recipe

Ingredients

  • 2 plain papad, (available in Indian grocery stores)
  • 2 medium tomatoes, seeded and diced very small to make a approx. 1cup
  • 1/2 English or deseeded cucumber, cut in very small pieces to make it about ½ cup
  • 2 tablespoons cilantro finely chopped
  • 1 teaspoon ginger finely shredded, optional
  • 1 green chili finely chopped, optional
  • ½ lemon
  • 2 teaspoon oil

Instruction

  1. Mix tomatoes, cucumbers, cilantro, ginger, and green chili, set aside
  2. Lightly oil the papads from both sides, set aside.
  3. Preheat the skillet over medium high heat. Roast the papads on both sides in the skillet one at a time, pressing with spatula. The papads will change to a light yellow with a few brown spots. Be careful not to over-roast. Fold the Papads in quarters while they are hot, making triangles right on the skillet.
  4. Remove the papads from the skillet and break on the folds, creating four triangles from each one.
  5. Take one piece of papad and top it with cucumber, tomato, ginger, green chili, and cilantro.
  6. Drizzle with lemon juice.

 

Tomato, Cucumber, and Onion Salad Recipe

Ingredients

  • 1 large cucumbers (English cucumber or a standard cucumber), thinly sliced and cut in quarters
  • 4 roma tomatoes, sliced and cut in squares
  • 1/2 Vidalia onion, very thinly sliced
  • 1-2 tablespoon of chopped fresh parsley
  • 1-2 tablespoon of chopped fresh chives
  • 1/2 cup of cider vinegar
  • 1/2 a cup of olive oil
  • 1/2 a cup of sugar (optional)
  • salt and freshly ground pepper

Instruction

  1. In a large serving bowl, toss together the bite size chopped cucumbers, tomatoes, and onions
  2. In a small bowl add vinegar, olive oil, salt and pepper to taste. Stir the ingredients.
  3. Pour dressing over the salad. Mix everything together.
  4. Let the salad stand for at least 20 minutes before serving.
  5. Add chopped chives and parsley.
  6. You might want to double check to see if there needs to be a little more sugar, salt or pepper for taste.
  7. Serve the cucumber salad as a side dish in a small bowl.

Tip: For a milder flavor, soak the chopped onions in salt water for 20 minutes before you mix it with the rest of the salad.

Dahi Salad Recipe In Hindi | Easy Curd Dish | Swaad Anusaar With Seema

Ingredients

  • 1 chopped tomato
  • 1 chopped cucumber
  • 1 chopped boiled potato
  • 1 cup of boiled peas
  • salt to taste
  • 1/2 tsp of black pepper
  • 1 tsp of green chillies
  • 1 tsp of cumin powder
  • 1 tsp of sugar
  • coriander leaves
  • 250gms of curd/dahi
  • boiled beetroot

Instructions

  1. Mix together tomato,cucumber, potato and green peas
  2. Add salt to taste,black pepper,green chillies,cumin powder,sugar and coriander leaves
  3. Add curd to it and mix everything
  4. Add beetroot and the dahi salad is ready.

 

Spicy Shredded Chicken Salad Recipe

Ingredients

  • 3 chicken thigh (or 200 grams of chicken breast)
  • 1 cup of shredded carrot
  • 1 cup of shredded cucumber
  • 1/4 cup of cilantro
  • Some jasmine flower

FOR MAKING THE SALAD DRESSING

  • 2 or 3 tbsp of jasmine tea or water
  • 1 tbsp of minced garlic
  •  1/2 tbsp of minced ginger
  • 1 tbsp of dou ban jiang
  • 2 tsp of Chinese black vinegar
  • 2 tsp of sesame oil
  • 1 tsp of sesame seeds (optional)

Instruction

  1. Boil the chicken thighs until it cooks through. It will take about 8 minutes. Chicken breast will work as well.
  2. Let it cool down to room temperature and rip it into strips. Once you are done, transfer that into a large bowl.
  3. Add a bunch of shredded cucumber, shredded carrot and a hand full cilantro.
  4. Set it aside. Let’s make the sauce.
  5. Pour in about 2-3 tbsp jasmine tea or water into the sauce bowl.
  6. Add in 1 tbsp of minced garlic, 1/2 tbsp of minced ginger.
  7. Next ingredients are the soul of Sichuan
  8. 1 tbsp of dou ban jiang.
  9. Besides that, We gonna add 2 tsp of Chinese black vinegar.
  10. Drizzle in 2 tsp of sesame oil. Give it a mix. Taste it and see if you need more salt. If it is too salty, add more jasmine tea in it.
  11. Pour the sauce into the big bowl. Toss them together make sure everything is coated with that delicious dressing. If you like to finish it with some sesame seed on the top, that’s awesome
  12. And that’s pretty much it. You are ready to serve.
