Roasted Bok Choy

Ingredients

  • 12 ounces baby bok choy (cut in half lengthwise)
  • 2 tablespoons olive oil
  • Ground black pepper (to taste)
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon red wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon toasted sesame seeds

 

Instructions

  1. Gather the ingredients.
  2. Preheat oven to 400 F.
  3. Place bok choy on a rimmed baking sheet.
  4. Drizzle with olive oil and a few grinds pepper.
  5. Bake until stalks are tender, 6 to 8 minutes.
  6. Meanwhile, in a small bowl, combine the sesame oil, soy sauce, vinegar, and sugar.
  7. Whisk to blend.
  8. Put bok choy on a platter or serving dish
  9. Spoon dressing over and sprinkle sesame seeds on top.
  10. Serve immediately.
