Sweet Potato Hash


  • 8 ounces smoked sausage (cubed)
  • 1 tablespoon olive oil
  • 1 large red bell pepper (coarsely chopped)
  • 1 cup onions (chopped)
  • 2 garlic cloves (minced)
  • 1 pound sweet potatoes (peeled and cut 1/2-inch cubes)
  • 1/2 teaspoon salt
  • 4 large eggs
  • 2 tablespoons fresh parsley or cilantro (chopped)
  • Black pepper (to taste)


  1. Gather the ingredients.

  2. Heat a large skillet, preferably cast iron, over medium-high heat until hot. Add the sausage, cook 2 minutes or until just beginning to lightly brown.

  3. Add the onion and bell pepper and cook 5 minutes or until the onions are browned on edges, stirring occasionally.

  4. Reduce the heat to medium, stir in the garlic, potatoes, 1 tablespoon of the oil, and the salt. Cover and cook 10 minutes or until the potatoes are tender, stirring frequently.

  5. Reduce the heat to low, crack each of the eggs over the potato mixture, cover and cook 5 minutes or until the egg whites are just set.

  6. Sprinkle with the parsley and black pepper.

  7. Serve immediately and enjoy!
