Cabbage Salad Recipe

Ingredients

  • 4 cups green cabbage thinly sliced
  • 2 cups purple cabbage thinly sliced
  • 1 small granny smith apple cored and sliced
Dressing
  • 2 tablespoons rice vinegar
  • 1 ½ tablespoons maple syrup
  • 2 teaspoons dijon mustard
  • 1 small clove garlic minced
  • ½ teaspoon each salt & pepper
  • ¼ cup vegetable oil
Toppings
  •  cup feta cheese
  •  cup dried cranberries
  • 3 tablespoons toasted pecans chopped

Instructions

  1. Place cabbage and apple in a large bowl.
  2. Combine dressing ingredients in a jar and shake well to combine.
  3. Pour dressing over cabbage (you may not need all of it) and toss to combine.
  4. Sprinkle with feta, cranberries and pecans. Serve.
