Leftover Ham Hash Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup onion diced
  • 1 1/2 cups leftover ham diced
  • 2 1/2 cups hash browns defrosted
  • 1/2 green pepper finely diced
  • 4 eggs
  • salt and pepper to taste
  • 1/4 cup cheddar cheese

Instructions

  1. Preheat oven to 375 degrees F
  2. Heat olive oil in an ovenproof skillet over medium heat. Add onion until onion is softened, about 5 minutes.
  3. Stir in hash browns, green pepper and ham. Cook until the the hashbrowns are lightly browned.
  4. Create 4 wells in the hash and break an egg into each hole. Season with salt and pepper and top with cheese.
  5. Bake for 12-15 minutes or until the eggs are cooked to your preference. Note, the eggs will continue to cook once removed from the oven so do not overcook.
