Lemon Couscous

Ingredients

  • 1 1/4 c. water
  • 1 c. pearl couscous
  • 3/4 tsp. kosher salt
  • 1 tbsp. olive oil
  • 3/4 c. sliced scallions
  • garlic clove
  • 1 tsp. lemon zest
  • 1/4 tsp. Pepper

Instructions

  1. In a 2-qt saucepan, heat water to a boil. Add couscous and 1⁄2 tsp of the salt. Cover and reduce heat to low; simmer 9 minutes, stirring once.
  2. Meanwhile, in a small skillet, heat oil. Add scallion and sauté 4 to 5 minutes until softened. Add garlic and cook 1 minute. Stir in lemon zest.
  3. Stir scallion mixture into couscous; sprinkle with remaining salt and the pepper. Serve.
