One Pan Spicy Egg Fried Rice Recipe

Ingredients

For the omelette:
  • 4 large eggs

For the fried rice:

  • 1 thumb sized piece of ginger, finely sliced
  • 2 garlic cloves, finely sliced
  • 1-2 Thai red chilli, finely sliced
  • 6 spring onions, roughly sliced
  • 1 small bunch of Tuscan kale, ribs & stems removed, roughly torn
  • 150g cooked white rice
  • 1 tbsp rice wine
  • 1 tbsp low sodium soy sauce

For the five spice mince:

  • 2 garlic cloves, finely sliced
  • 1 thumb sized piece of ginger, finely sliced
  • 1 tbsp Soy sauce
  • 1 tbsp rice wine
  • 200g soya mince
  • 1 tsp of Chinese 5 spice
  • 1-2 tsp Coconut oil, for frying
  • Salt & white pepper

Instructions

  1. Heat a large frying pan over a medium high heat and add 1 tsp oil.
  2. Whisk the eggs, then sprinkle with salt and white pepper. Add the eggs to the pan and make an omelette by whisking vigorously and then allowing to set. Once the edges have set, loosen the side and fold the omelette in half. Once cooked remove from the pan, allow to cool, slice thinly and set aside.
  3. For the fried rice, add more oil to the pan and fry the garlic, ginger, and chilli until fragrant and aromatic.
  4. Add the kale and stir fry until tender. Add a splash of water to help the kale become tender.
  5. Add the cooked rice to the pan along with the soy sauce, the rice wine and a pinch of white pepper. Cook until the rice is warmed through.
  6. Add the sliced omelette back to the pan stir through until warm. Remove the fried rice to a bowl and keep warm.
  7. For the spicy soya mince, add more oil to the pan and fry the garlic, chilli & ginger for 1 minute. Add the soya mince and fry until heated through and then add the soy sauce and rice wine and a pinch of 5 spice and white pepper.
  8. Serve over the fried rice and garnish with coriander leaves.
