Ingredients
- 1 pound chicken breast boneless, skinless, 1/2 inch diced
- 1 packet taco seasoning
- 1 Tablespoon olive oil
- 1 lime juiced
- 4 cups white rice cooked
- 1/4 cup cilantro minced
- 15 ounces black beans drained and rinsed
- 1 cup salsa
- 1/2 cup sour cream
- 1 avocado peeled, pitted and diced
- 1 cup Monterey jack cheese shredded
- 4 cups lettuce chopped
Instructions

Combine diced chicken breast and taco seasoning and toss to coat the chicken.

Heat olive oil over medium-high heat in a 12-inch skillet. Add the chicken and cook until no pink remains. Sprinkle with lime juice, stir, and remove from heat.

Combine cooked rice and cilantro in a bowl and stir to combine.

To serve, fill 4 bowls with equal amounts of lettuce, rice, black beans, chicken, salsa, sour cream, avocado, and cheese.
